Garfish is once again proud to be involved in the judging of the aquaculture category at the Sydney Royal Fine Food Show. Held by the Royal Agricultural Society of NSW, the Fine Food Show holds a range of competitive events throughout the year aimed to select, reward and applaud the best producers in the industry.
Since 2001, the Summer Aquaculture competition has been raising the benchmark for products from around Australia. Judges are selected based on their industry expertise and this year, Stewart Wallace, our Garfish Executive Chef, was a Panel Chair Judge.
Products from around Australia are judged including cooked prawns, oysters, barramundi, fresh fish, cured salmon, cured trout, trout caviar and aquaculture-derived terrines, mousses and dips.
Stewart describes the judging as “a very thorough process,” where up to 60 different criteria are assessed, everything from the appearance and packaging, right through to the taste and how the product feels in your mouth.
The competition is points based and products can be awarded Gold, Silver and Bronze medals depending on their overall points scoring. For the competitors, a medal represents a significant achievement and is confirmation of their dedication and ability.
This year, the Sydney Royal Aquaculture Competition received a record 137 entries. Gold and Championship status was shared amongst a range of well-known and local producers, including a company who has long been successful within Sydney Royal competitions, Tathra Oyster.

- Champion Prawn– Gold Coast Marine Aquaculture
- Champion Plate Size Barramundi – Coral Coast Barramundi
- Champion Large Whole Fish Barramundi – Coral Coast Barramundi
- Champion Fresh Fish – Tropical Finfish’s Giant Grouper (Queensland Grouper)
- Champion Salmon Product – Eden Smokehouse’s Hot-Smoked Atlantic Salmon
- Champion Trout Product – Pialligo Estate’s Smoked Rainbow Trout Fillet
The Aquaculture Competition saw 21 Gold, 53 Silver, 32 Bronze Medals and eight Championship Trophies awarded. Garfish congratulates all competitors on this year’s results.
