Meet our Manly bar staff

Overlooking the harbour, our Manly restaurant is a great location to enjoy some award winning seafood, but did you also know about our bar area?

Manly’s bar area offers an extensive range of beers (including craft beers), wines, champagnes and cocktails.

Only a short stroll from the Manly ferry, our customers find our bar area is a perfect way to relax at the end of the day. Other customers enjoy a pre-dinner drink in our bar area when meeting up with friends and family for dinner.

I’ve been working at Garfish restaurant as a senior bartender for 2 years. My role is to maintain the quality of beverages and make sure that they are always made to a high standard. I am also responsible for training new staff. I think we have a very good cocktail menu to choose the right drink for any occasion. Our Bar Manager, James Whaler, has done a great job!

What do you enjoy most about working at Garfish?

The location, the look of the restaurant, and good quality products. I also enjoy the professionalism of our management team, my colleagues, especially my Czech friend Kuba (Jakub). The biggest motivation to me is Mark Dickey, the owner of Garfish. He’s always here and helping behind the bar!

Why do you think customers like dining at Garfish?

I think it is because of the friendly, professional service given to customers from our staff. Always fresh and tasty food which is good value, served in a great location.

Tell us something about yourself outside of work

I am from the Czech Republic. I love surfing, snow boarding, traveling, music and nice people. I hate onions!

Tell us about your role at Garfish Manly:
I have worked at Garfish Manly as a bartender for 6 months and have been working in hospitality for over 5 years (including in the Czech Republic).

What do you enjoy most about working at Garfish?
My colleagues, especially Martin! Working with high quality spirits and liquors, fresh fruits and cold pressed juices for cocktails.

Why do you think customers like dining at Garfish?
The service is amazing. Good value for quality food and beverages.

Tell us something about yourself outside of work e.g. hobbies, interests
I enjoy boxing, paddleboarding and cooking for my friends.
